What is Dry Aged Meat?
Dry Aged meat is meat that is aged for at least 21 days under perfect conditions in the dry cabinets in our restaurants. Due to the right temperature, humidity, and air circulation, about 30 percent of the moisture in the meat evaporates. The result is a wonderful tender texture and extra rich and intense flavors.
